Cinco de Mayo 2026

Today, I decided to celebrate Cinco de Mayo all day via my food choices.

Breakfast was one of my faves – avocado toast with salsa
Lunch out with my sister in law, who also winters in south Texas – Quesadillas de Pollo. That’s not tequila by the way … it’s just ice water with a lemon in it. In hindsight, I should have requested a lime
Dinner I prepared for hubs and me – Pork Carnitas with Guacamole, Salsa,
and Sour Cream

Because we live half of our retirement lives in South Texas, in an area with a significant Mexican American population, I feel pulled towards celebrating the culture too. In my world (as a foodie), food is a key element of every culture.

    Looks great Terry. I do really enjoy Mexican food as long as not ridiculously spicy. I cook a few things at home too, just got into tacos and bought special holders for them.         LOL! It always touts itself as a Mexican restaurant and most here believe it to be that. I will dig deeper. I have not been in years but was thinking of it as Franc has a voucher we can use there.

    Cinco de Mayo is one of my favorite food days! Kevin and I really like Mexican food so making a bunch of homemade items for this day is fun and yummy. 🙂 And yes, it is a fun fact US celebrates it more than in Mexican. Your photos are delicious-looking.

      We’ve learned to enjoy Tex-Mex food through our winters in South Texas, and also authentic Mexican food when we cross the border into the border town nearest to us down there. Thanks for your compliment on the photos, Charla. Making food look good enough to eat is the goal of food photography. 😊

      It sure was, Betty! Yesterday, as I do every year on May 05, I did a lot of reading about Cinco de Mayo. It’s so interesting to learn how it came to the USA after the civil war, and then how it has developed over the years to the event it is today. Are there festivals etc near you?

        Terry, I believe there are some. Our neighbors had a party on the Saturday before. It was our first time ever celebrating Cinco de Mayo. They had pork carnitas and a delicious cinnamon churro cake. And they had some alcoholic drinks, but we don’t drink. It was a good time!

        The one thing I didn’t make was dessert because all of the meals were heavy enough. Interesting that you had pork carnitas too … go figure, lol. That churro cake makes my mouth water just reading the word! Churros are among my fave treats. Have a great day, Betty!

        Churros are great. We don’t often see them in UK so I take advantage when I do. I got into them in Spain many years ago.
