A Cold Weather Feast

For quite some time, I’ve been craving a good old pot roast meal.

Hubs isn’t a fan of roast beef, so I seldom make it. In fact, I believe it’s over a year since I’ve made a roast beef dinner.

Yesterday, I purchased a nicely marbled chuck roast (bottom blade in Canada) and cooked it in my Instant Pot. Tougher well-marbled cuts are the best for Instant Pot cooking.

The preparation is a breeze, and except for the peas and the salad, it was a one-pot meal and most welcome on a cold Saskatchewan day.

The meat was fork tender and hubs even commented that he liked it.

Win-win!

        That’s one of the downsides of long road trips, you don’t always eat that well unless you pay for very expensive restaurant meals. There’s nothing like a homemade meal. The weekend is almost here, so I hope you have a good one.

      He used to love beef of any kind, Lenore. All of a sudden, about 15 years ago, he decided that the only beef he liked was lean ground. I have no idea what caused that change of heart. Maybe the price? Who knows? It’s the old men of from Mars thing, I think, lol.

      I do remember you, Jessica. Hi! Hope all’s going well for you. Are you still creating art from old jewelry? I cook many different meat dishes in my Instant Pot. You can Google any recipe. Just type in “Instant Pot Roast Beef” or whatever meat dishes you want to cook. The recipes are generally detailed and easy to follow.

      I am too, Betty! It was very good and today, dinner will be beef stew from the leftovers.
