A Quintessential Prairie Dinner

Many would not call this a complete dinner, but it’s one this house looks forward to each summer.

I have mine with just butter and salt. Hubs adds pepper as well .

Both of us were raised in families where corn on the cob was a complete summer meal. Both of our Moms made big pots full in boiling water.

I’ve found several prep methods that are far easier and quicker (and more flavourful) than the boiling method.

This time, I just wrapped the shucked cobs in damp paper towels and then microwaved two cobs at a time for seven minutes (total time – not each)

My favourite method is four shucked cobs in the Instant Pot for two minutes at high pressure, which we’ll do next time.

    Yes, I have. I like my corn, boiled and sprinkled with salt. So satisfying…On the grill is good too.

    I love corn on the cob dripping in butter. However, we don’t eat it much because I only see it shrunk wrapped in plastic. They feed the animals with the fresh grown in the feeds. It does not seem popular here

      Sorry to hear that, Carole. Here in North America, we have both feed corn and table corn. We buy it fresh in the husks during summer months.

    I love corn on the cob (and butter & salt). I could make corn on the cob a meal in itself but I don’t think I could sell Dan on the idea. I will have to try the Instapot pot method. We generally barbecue ours – with steak and a potato.

      Years ago, we made it on the BBQ (in the husks), which was good too. The Instant Pot method is quick, easy, not messy, and has results we love.

      I think you’ll love the instant pot method,Lenore. They’re tender crisp and full of flavour. Just 1 cup of water in pot. If the cobs are long, I cut them in half so they fit well. And shuck them of course and remove silk before cooking. Enjoy!

    I LOVE corn on the cob. I haven’t had it by itself for a meal, but I have had fresh corn on the cob and tomatoes for a meal. We are lucky to enjoy fresh corn on the cob both at home and at Big Cypress during the Winter. Enjoy!
