When we’re “on the road” in our motorhome, we seldom eat in restaurants, and what we do eat en route to our destination, is very simple.

My feature photo is of our typical “road breakfast”, which generally happens after we’ve been rolling for about an hour. When we first get up in the morning, we clean up, have a quick coffee, and then hit the road.

I try to keep things as healthy as possible with a variety of fruits, veggies, leafy greens, whole grains, lean meats, and dairy.

Lunch is always a sandwich of some kind

We like the convenience of the prepared salads you can buy at WalMart and we buy enough fresh ones to keep a two day supply on hand in our MH fridge for our suppers whenever we stop. I find that with these prepared salads, we don’t waste any food (by having a head of lettuce go bad, etc) and we can have a lot of variety without having to keep lots of ingredients on hand. This is the one meal we don’t eat while we’re on the move.

I love that our generator allows us to make our own morning coffee
and to fire up the microwave
for soups to have with our salads.

For snacks, We mix it up a bit between healthy and not so healthy.

The treat-size bars are plenty big enough for a quick snack
and we usually have only two each

It may not be fancy, but it works for us. It gets us from point a to point b without having to spend a lot of extra cash on restaurant meals.
